- 1 bunch asparagus
- 4 tsp butter / margarine
- 1/4 cup pine nuts
- pinches of salt and pepper
- lemon or orange wedge (optional)
- partially fill a large frying pan with water and bring to boil over high heat. Meanwhile snap the tough ends from the asparagus and discard. Boil asparagus until tender - crisp, about 2 mins. Drain and pat dry and place on platter.
- Wipe pan and place over medium heat. Add butter. When melted, add pine nuts and stir continuously until the begin to turn golden, about 2 min. Pour butter mixture over asparagus. Add pinches of salt and pepper. Serve with a wedge of lemon or orange for squeezing over top.
