Asparagus with Pine Nut Butter!!!

I tried to scan the recipe in...didn't work! Sorry no pictures!

  • 1 bunch asparagus
  • 4 tsp butter / margarine
  • 1/4 cup pine nuts
  • pinches of salt and pepper
  • lemon or orange wedge (optional)
  1. partially fill a large frying pan with water and bring to boil over high heat. Meanwhile snap the tough ends from the asparagus and discard. Boil asparagus until tender - crisp, about 2 mins. Drain and pat dry and place on platter.
  2. Wipe pan and place over medium heat. Add butter. When melted, add pine nuts and stir continuously until the begin to turn golden, about 2 min. Pour butter mixture over asparagus. Add pinches of salt and pepper. Serve with a wedge of lemon or orange for squeezing over top.
